Blueberry Tiramisu is a refreshing no-bake dessert with layers of mascarpone cream, coffee-soaked ladyfingers, and vibrant blueberries. It’s the perfect treat for summer gatherings, offering a beautiful balance of sweet, tangy, and slightly bitter flavors.
Ingredients
Scale
- 2 cups fresh blueberries
- 1/2 cup granulated sugar
- 2 tbsp fresh lemon juice
- 1 cup heavy whipping cream
- 1 cup mascarpone cheese
- 1 tsp vanilla extract
- 24 ladyfingers
- 1 cup blueberry syrup (or blueberry jam)
- 1 shot of strong coffee or espresso
- Fresh mint leaves for garnish
Instructions
- Prepare blueberry syrup: In a pot, combine blueberries and water. Mash the berries and simmer for 2 minutes. Strain and return juice to the pot. Add sugar and lemon juice, simmer for another 3 minutes. Cool the syrup.
- Whip the cream: In a bowl, combine heavy cream and sugar. Whisk until stiff peaks form, set aside.
- Make mascarpone filling: Whisk mascarpone cheese and vanilla until smooth. Gently fold in whipped cream and 3/4 cup of the cooled blueberry syrup until combined.
- Make coffee-blueberry syrup: Combine remaining blueberry syrup and coffee. Quickly dip ladyfingers into the mixture for 5-10 seconds.
- Assemble the tiramisu: Layer soaked ladyfingers in a serving dish, spread half of the mascarpone mixture over them. Repeat with another layer of ladyfingers and remaining mascarpone mixture.
- Top and chill: Drizzle with additional blueberry syrup, garnish with fresh blueberries and mint leaves. Refrigerate for 4 hours or overnight.
Notes
- Make sure to use fresh blueberries for the best flavor.
- Whip the cream when it’s cold for the best texture.
- Do not soak the ladyfingers too long—just a quick dip will do.
- This dessert can be made ahead of time and stored in the refrigerator for up to 3 days.
