Description

This Cheesy Kielbasa Rice and Broccoli Skillet is a hearty, one-pan meal combining savory kielbasa, creamy cheese, and tender vegetables. It’s quick, easy, and perfect for busy weeknights.


Ingredients

  • 1 lb Kielbasa, sliced
  • 1 cup Rice
  • 2 cups Broccoli florets
  • 1 medium Onion, chopped
  • 1 Bell Pepper, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 1 ½ cups Cheddar Cheese, shredded
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Heat olive oil over medium-high heat in a large skillet.
  2. Add kielbasa and cook for 3-4 minutes on each side until browned. Remove from the skillet and set aside.
  3. In the same skillet, sauté onion and bell pepper until the onion is translucent, about 5 minutes.
  4. Add garlic and cook for another minute.
  5. Season with salt and pepper to taste.
  6. Stir in rice and cook for 1-2 minutes to toast.
  7. Add chicken broth and bring to a boil.
  8. Reduce heat to low, cover, and simmer for 15 minutes.
  9. Add broccoli to the skillet, cover again, and cook for an additional 5-7 minutes or until rice is tender and broccoli is bright green.
  10. Stir in kielbasa and 1 cup of cheese until melted and well combined.
  11. Top with the remaining cheese, cover, and let sit until the cheese melts completely.

Notes

  • For a spicier version, add red pepper flakes or hot sauce.
  • Use a mix of cheeses like cheddar and Monterey Jack for extra creaminess.
  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
