Description

This Christmas Salad is a festive, healthy, and vibrant dish featuring seasonal ingredients like pecans, mandarin oranges, pomegranate seeds, and baby spinach. Tossed with a tangy homemade Honey-Mustard Lime Vinaigrette, it adds a burst of color and flavor to any holiday meal. This quick 20-minute salad is perfect for both busy weeknights and holiday gatherings.

  • 6 oz baby spinach
  • 1 cup pecan halves, toasted (some chopped finely)
  • ½ cup dried cranberries
  • 3 mandarin oranges, peeled and segmented
  • ⅓ cup goat cheese, crumbled
  • ⅓ cup pomegranate arils
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons Dijon mustard
  • 3 tablespoons honey
  • 1 large lime, juiced

Instructions

  1. Preheat your oven to 350°F (175°C) and toast the pecans for about 10 minutes until fragrant. Allow them to cool.
  2. In a mason jar, combine olive oil, Dijon mustard, honey, and lime juice. Shake well until emulsified. Adjust the lime juice or honey as needed.
  3. In a large bowl, add spinach and top with toasted pecans, dried cranberries, mandarin orange segments, pomegranate seeds, and goat cheese.
  4. Drizzle the prepared dressing over the salad just before serving and toss gently to combine.

Notes

  • For a make-ahead option, prep the mandarin oranges, pomegranate arils, and toasted pecans ahead of time. Store them separately in airtight containers.
  • Prepare the dressing up to 3 days in advance and refrigerate it in a mason jar.
  • Don’t add the dressing or nuts until right before serving to maintain freshness.
