- 1 cup pecan halves, toasted (some chopped finely)
- ½ cup dried cranberries
- 3 mandarin oranges, peeled and segmented
- ⅓ cup goat cheese, crumbled
- ⅓ cup pomegranate arils
- ⅓ cup extra virgin olive oil
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
- 1 large lime, juiced
Instructions
- Preheat your oven to 350°F (175°C) and toast the pecans for about 10 minutes until fragrant. Allow them to cool.
- In a mason jar, combine olive oil, Dijon mustard, honey, and lime juice. Shake well until emulsified. Adjust the lime juice or honey as needed.
- In a large bowl, add spinach and top with toasted pecans, dried cranberries, mandarin orange segments, pomegranate seeds, and goat cheese.
- Drizzle the prepared dressing over the salad just before serving and toss gently to combine.

- For a make-ahead option, prep the mandarin oranges, pomegranate arils, and toasted pecans ahead of time. Store them separately in airtight containers.
- Prepare the dressing up to 3 days in advance and refrigerate it in a mason jar.
