Instructions

  1. Preheat your oven to 425°F (220°C). Grease your muffin tin or line it with muffin cups.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, mash the fresh strawberries lightly using a potato masher. Set them aside.
  4. Beat the eggs and oil together in another bowl until well combined. Add the mashed strawberries and stir.
  5. Pour the wet ingredients into the dry ingredients and mix gently with a wooden spoon until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup almost to the top.
  7. Bake the muffins at 425°F for 5 minutes, then reduce the temperature to 350°F and bake for an additional 15-19 minutes. Check for doneness by inserting a toothpick into the center of a muffin—if it comes out clean, the muffins are done.
