Description

Lime Divine Tarts are bite-sized desserts featuring a rich, tangy lime curd nestled inside a soft, buttery cream cheese crust. These refreshing citrus tarts are perfect for parties, holidays, or any occasion that calls for a light and zesty sweet treat.

  • 2 large eggs (room temperature)
  • 1 large egg yolk (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 teaspoon grated lime zest
  • 1/4 cup unsalted butter, cubed
  • 1/2 cup unsalted butter, softened (for tart shells)
  • 3 ounces cream cheese, softened
  • 1 cup all-purpose flour
  • Optional: 1 teaspoon grated lime zest (for garnish)
  • Optional: 2 tablespoons grated white chocolate (for garnish)

Instructions

  1. In a small heavy saucepan over medium heat, whisk together 2 eggs, 1 egg yolk, sugar, lime juice, and lime zest until fully blended.
  2. Add cubed butter and cook while whisking constantly until the mixture thickens and coats the back of a spoon.
  3. Transfer the lime curd to a bowl, let it cool, then cover and refrigerate until chilled.
  4. In a mixing bowl, cream together softened butter and cream cheese until smooth and fluffy.
  5. Gradually add flour and mix until a soft dough forms.
  6. Cover the dough and refrigerate for 1 hour or until easy to handle.
  7. Preheat oven to 375°F (190°C).
  8. Roll dough into 1-inch balls and press into the bottoms and sides of 24 ungreased mini muffin cups.
  9. Prick the bottoms lightly with a fork.
  10. Bake for 13–15 minutes or until golden brown.
  11. Cool for 5 minutes, then transfer to wire racks to cool completely.
  12. Fill each tart shell with chilled lime curd.
  13. Garnish with lime zest or grated white chocolate if desired.
  14. Refrigerate before serving and store leftovers chilled.
