- 2 large eggs (room temperature)
- 1 large egg yolk (room temperature)
- 1/2 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 teaspoon grated lime zest
- 1/4 cup unsalted butter, cubed
- 1/2 cup unsalted butter, softened (for tart shells)
- 3 ounces cream cheese, softened
- 1 cup all-purpose flour
- Optional: 1 teaspoon grated lime zest (for garnish)
- Optional: 2 tablespoons grated white chocolate (for garnish)
Instructions
- In a small heavy saucepan over medium heat, whisk together 2 eggs, 1 egg yolk, sugar, lime juice, and lime zest until fully blended.
- Add cubed butter and cook while whisking constantly until the mixture thickens and coats the back of a spoon.
- Transfer the lime curd to a bowl, let it cool, then cover and refrigerate until chilled.
- In a mixing bowl, cream together softened butter and cream cheese until smooth and fluffy.
- Gradually add flour and mix until a soft dough forms.
- Cover the dough and refrigerate for 1 hour or until easy to handle.
- Preheat oven to 375°F (190°C).
- Roll dough into 1-inch balls and press into the bottoms and sides of 24 ungreased mini muffin cups.
- Prick the bottoms lightly with a fork.
- Bake for 13–15 minutes or until golden brown.
- Cool for 5 minutes, then transfer to wire racks to cool completely.
- Fill each tart shell with chilled lime curd.
- Garnish with lime zest or grated white chocolate if desired.
- Refrigerate before serving and store leftovers chilled.
