Ingredients

Scale
  • 16 oz skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons soy sauce or liquid aminos
  • 1 tablespoon chicken rub seasoning
  • 1 teaspoon BBQ rub/seasoning
  • Salt and pepper to taste
  • ½ green bell pepper, sliced
  • ½ red bell pepper, sliced
  • ½ yellow bell pepper, sliced
  • ½ zucchini, sliced
  • ¼ red onion, sliced
  • 4–5 grape tomatoes
  • Olive oil spray (optional)

Instructions

  1. Cut the chicken breasts into 1-inch cubes.
  2. Season and marinate the chicken with soy sauce, chicken rub, BBQ seasoning, salt, and pepper. Let it marinate for at least 30 minutes (or up to 24 hours).
  3. Thread the chicken and vegetables onto skewers, alternating chicken with bell peppers, zucchini, onions, and grape tomatoes.
  4. Preheat the air fryer to 350°F (175°C).
  5. Spray the skewers with olive oil (optional) for extra juiciness.
  6. Place the skewers in the air fryer basket in a single layer, ensuring they aren’t overcrowded.
  7. Cook for 10 minutes, flip the skewers, and cook for an additional 7-10 minutes until the chicken reaches an internal temperature of 165°F.
  8. Let the kebabs rest for 2-3 minutes before serving.

Notes

  • Marinate the chicken for at least 30 minutes for maximum flavor.
  • If using wooden skewers, soak them in water for 20-30 minutes before cooking to prevent burning.
  • Check the internal temperature of the chicken using a meat thermometer to ensure it’s fully cooked.
  • To avoid overcrowding, cook the kebabs in batches if needed.
