Ingredients
Scale
- 8 cups peeled and diced apples (about 6 apples)
- 2 cups apple juice (organic preferred)
- 1 small lemon, zest and juice
- 1 tablespoon apple cider vinegar
- Pinch of salt
- 3 tablespoons pectin
- 1.5 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 3 cups white granulated sugar
Instructions
- Combine diced apples, apple juice, lemon zest and juice, apple cider vinegar, and a pinch of salt in a large pot on the stove.
- Bring to a boil over medium-high heat, then turn down to low and simmer for 10-12 minutes until the apples are tender.
- Add in the remaining spices and sprinkle the pectin over the top while stirring in gradually.
- Increase heat to high and bring the mixture to a full rolling boil before adding sugar all at once. Stir continuously to prevent scorching.
- Once boiling for 1 minute, remove from heat and spoon jam into sterilized jars. Store in the fridge or water bath can for long-term storage.
Notes
- Do not reduce the sugar, as it’s essential for setting the jam with pectin.
- If your jars do not seal, store them in the refrigerator and consume within 2-4 weeks.
- For a smoother consistency, you can blend the apples before cooking.
