Instructions
- Preheat your oven to 350°F (175°C). Butter three 8-inch cake pans, line the bottoms with parchment paper, and dust with flour.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. In a large bowl, cream butter, oil, and sugars until light and fluffy. Add eggs one at a time, mixing well after each. Mix in vanilla extract.
- Alternate adding dry ingredients and wet ingredients (sour cream and buttermilk), starting and ending with dry ingredients. Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let the cakes cool completely.
- In a skillet, cook apples, butter, brown sugar, and cinnamon until the apples are tender but not mushy, about 5 minutes. Strain the liquid from the apples and set it aside for the optional caramel drip. Allow the filling to cool completely.
- Beat butter and brown sugar together until fluffy. Gradually add powdered sugar, salt, and caramel sauce, mixing until smooth. Whip the frosting for a couple of minutes until light and creamy.
- Place one cake layer on your cake stand. Spread a thin layer of frosting and pipe a border around the edges. Add half of the apple filling inside the border. Repeat with the second layer of cake, frosting, and apple filling. Add the final layer of cake and frost the outside of the cake.
- Whisk the reserved apple liquid with powdered sugar until it forms a smooth icing. Drizzle it over the sides of the cake for a beautiful finish.
Notes
- Don’t Overmix the Cake Batter: Overmixing can lead to a dense, flat cake. Mix just until the ingredients are incorporated.
- Use the Right Apples: For the best texture, use apples that hold their shape when cooked, like Granny Smith or Honeycrisp.
- Don’t Overcook the Apple Filling: You want soft apples, not applesauce. Keep an eye on the cooking time to avoid this.
- Strain the Apple Filling: This prevents the layers from becoming soggy and makes for cleaner slices.
- Use Caramel Sauce in the Frosting: Caramel syrup is thinner and sweeter, so stick with sauce for the best consistency and flavor in the frosting.
