Description
Avocado deviled eggs are a creamy, fresh twist on the classic appetizer, made without mayonnaise. Ripe avocado replaces mayo for a naturally rich texture, balanced with lemon juice and simple seasonings, making these eggs light, healthy, and full of flavor.
Ingredients
Scale
- 6 large eggs: hard-boiled and halved
- 1 large ripe avocado (about 200 g): provides creaminess and healthy fats
- 1 tablespoon fresh lemon juice (15 ml): adds brightness and prevents browning
- 1 teaspoon yellow mustard (5 g): adds classic deviled egg tang
- 1/4 teaspoon salt (1.5 g): enhances overall flavor
- 1/8 teaspoon ground black pepper (0.5 g): adds mild heat
- 1/4 teaspoon paprika (1 g): for garnish and mild smokiness
Instructions
- Place the eggs in a saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 9–10 minutes until fully cooked.
- Transfer the eggs to an ice bath and let them cool completely, then peel the shells carefully.
- Slice each egg in half lengthwise and remove the yolks, placing them in a mixing bowl.
- Add the avocado flesh to the bowl with the yolks and mash until smooth and creamy.
- Stir in the lemon juice, mustard, salt, and black pepper until fully combined.
- Spoon or pipe the avocado mixture evenly into the egg white halves.
- Sprinkle paprika on top and serve immediately for best color and flavor.
Notes
- Use a ripe but firm avocado for the best creamy texture.
- Add extra lemon juice if preparing slightly ahead to reduce browning.
- Serve shortly after assembling for the freshest taste and appearance.
- Optional garnishes include fresh herbs or sliced green onions.
