Description

Avocado Toast with Scrambled Egg is a quick, healthy, and satisfying meal that combines creamy avocado with fluffy scrambled eggs on a crispy piece of toast. It’s perfect for breakfast or brunch, offering a balanced combination of protein, healthy fats, and fiber.

Ingredients

Scale
  • 1 slice of hearty bread (sourdough, rye, or multigrain)
  • 2 tablespoons butter, divided
  • 1 small Hass avocado
  • 1 tablespoon freshly squeezed lemon juice
  • Flaky sea salt (for sprinkling)
  • Freshly ground black pepper
  • 2 large eggs
  • 1 tablespoon heavy cream
  • ⅛ teaspoon fine sea salt

Instructions

  1. Toast the bread to your liking.
  2. Spread half of the butter on the warm bread.
  3. Halve and pit the avocado. Slice it and arrange the slices on the buttered toast.
  4. Sprinkle the avocado with lemon juice, flaky salt, and freshly ground black pepper.
  5. In a bowl, whisk the eggs with heavy cream, fine sea salt, and black pepper.
  6. Set a non-stick skillet over medium-low heat, and melt the remaining butter. Pour in the egg mixture.
  7. Let the eggs set slightly, then gently stir and let the edges pull into the center. Repeat as needed until eggs are creamy but not overcooked.
  8. Remove the pan from heat just before the eggs are fully set, as they will continue cooking with residual heat.
  9. Place the scrambled eggs on top of the avocado toast and season with additional flaky salt and pepper if desired.
  10. Serve immediately and enjoy!

Notes

  • Use good-quality bread for the best texture.
  • Feel free to use different types of eggs (fried, poached) if preferred.
  • Avocado can be mashed for a smoother texture instead of sliced.
  • For extra flavor, consider adding hot sauce or smoked salmon as toppings.
  • This dish is best served fresh, as the toast can become soggy if left for too long.
