Description

Baked Balsamic Chicken is a juicy, oven-finished one-pan chicken dish made with seared chicken breasts simmered in a sweet and tangy balsamic glaze, then topped with fresh tomatoes, mozzarella, and basil. This easy weeknight dinner is flavorful, comforting, and perfect served over rice, pasta, or vegetables.

Ingredients

Scale
  • 2 lb boneless, skinless chicken breasts, pounded to even thickness
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons avocado oil or olive oil (for sauce)
  • 2 tablespoons avocado oil or high-heat oil (for searing)
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Dijon mustard
  • 8 oz grape tomatoes, halved
  • 8 oz fresh mozzarella balls (ciliegine or pearls)
  • 2 tablespoons fresh basil, finely chopped
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)

Instructions

  1. In a medium bowl, whisk together balsamic vinegar, honey, 2 tablespoons oil, minced garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper to taste. Set aside.
  2. In a separate bowl, combine halved grape tomatoes, fresh mozzarella balls, and chopped basil. Lightly season with salt and pepper and set aside.
  3. Preheat the oven to 400°F (200°C).
  4. Pat the chicken breasts dry and pound them to an even thickness for even cooking.
  5. Heat 2 tablespoons oil in a large oven-safe skillet over medium-high heat. When the oil is hot, add the chicken in a single layer and sear for 1–2 minutes per side until lightly golden.
  6. Pour the prepared balsamic sauce into the skillet. Bring to a quick simmer and scrape up any browned bits from the bottom of the pan.
  7. Remove the skillet from heat and evenly spoon the tomato and mozzarella mixture over the chicken.
  8. Transfer the skillet to the oven and bake uncovered for 18–23 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven and let the chicken rest for 5 minutes before serving.

Notes

  • Pound the chicken breasts to even thickness to ensure juicy and evenly cooked meat.
  • Chicken thighs can be substituted; begin checking for doneness after 15–18 minutes.
  • Use high-quality balsamic vinegar for the best flavor and balanced glaze.
  • If using larger mozzarella balls, cut them in half for even melting.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
