Description

These Banana Oatmeal Bars are a quick, easy, and healthy snack, perfect for breakfast or on-the-go. Made with simple, wholesome ingredients like ripe bananas, rolled oats, nut butter, and chocolate chips, these bars are packed with fiber, healthy fats, and natural sweetness. They’re a great way to start your day or to keep your energy up throughout the day.

Ingredients

Scale
  • 1 ½ cups mashed bananas (about 3 ripe bananas)
  • ½ cup nut butter (such as almond butter, peanut butter, or cashew butter)
  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, nut butter, rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt.
  3. Stir the mixture until well combined, ensuring the oats are fully coated with the other ingredients.
  4. Transfer the mixture to the prepared baking pan and press it into an even layer. Optionally, sprinkle additional chocolate chips on top.
  5. Bake for 18 to 20 minutes, or until the edges are golden and the bars are set. Check with a toothpick; it should come out clean.
  6. Allow the bars to cool completely in the pan before cutting them into squares.

Notes

  • For a nut-free version, replace the nut butter with sunflower seed butter.
  • Feel free to swap chocolate chips with dried fruit or nuts for different flavor combinations.
  • Allow the bars to cool completely before cutting to ensure they firm up and hold together.
  • If you prefer a spicier flavor, try adding a pinch of nutmeg or cloves.
