Description

Birria tacos are a traditional Mexican dish that features tender, slow-cooked beef, seasoned with a rich blend of spices and herbs, and served in crispy corn tortillas with melted cheese. The dish is known for its flavorful consomé (broth), which is used to dip the tacos, making every bite a savory, spicy, and satisfying experience.

Ingredients

Scale
  • 4 dried Guajillo peppers
  • 4 dried Ancho chiles
  • 4 Chipotle peppers in adobo
  • 1 onion, chopped
  • 4 garlic cloves
  • 1/2 cup crushed tomatoes
  • 1/2 cup beef stock
  • 1 tbsp apple cider vinegar
  • 2 bay leaves
  • 2 tbsp Mexican oregano
  • 1 tsp dried thyme
  • 1/2 tsp cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground allspice
  • 3 lbs organic chuck roast, chopped into medium-large chunks
  • 1 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 onion, diced
  • 4 cups organic beef stock
  • 2 cups water
  • 12 organic corn tortillas
  • 1 cup shredded Oaxaca cheese
  • 1 cup chopped fresh cilantro

Instructions

  1. Prepare the chili paste by removing stems and seeds from the dried Guajillo, Ancho, and Chipotle peppers. Boil the peppers in beef stock for 15-20 minutes. Blend with garlic, onion, crushed tomatoes, apple cider vinegar, and spices until smooth.
  2. Preheat your oven to 350°F. In a Dutch oven, heat olive oil and sear the chopped chuck roast chunks until golden on all sides. Set the seared beef aside.
  3. In the same pot, sauté the diced onion until translucent. Add the chili paste and let it simmer for 1-2 minutes. Add beef stock and water, stirring to combine.
  4. Return the seared beef to the pot and stir. Cover and place the pot in the oven to braise for about 2.5 hours or until the beef is tender and easy to shred.
  5. Remove the beef from the pot and shred it with two forks. Ensure that the shredded beef is coated in the flavorful consomé (broth).
  6. Heat a non-stick skillet over medium heat. Lightly dip the tortillas into the consomé and place them in the skillet to crisp for a few seconds. Top with shredded beef and Oaxaca cheese.
  7. Fold the tortillas and cook on each side until golden and crispy. Repeat until all tacos are made.
  8. Serve immediately with the consomé on the side for dipping, and garnish with chopped cilantro.

Notes

  • For a spicier taco, add more Chipotle peppers or use a higher quantity of Guajillo peppers.
  • If you prefer a meatless version, you can substitute the beef with jackfruit or tofu for a plant-based option.
  • For best results, double up on tortillas to prevent sogginess and ensure a sturdy taco shell.
  • Store any leftover beef and consomé separately in airtight containers in the refrigerator for up to 3-4 days.
