Description
Butterscotch Toffee Cookie Bars are a rich, indulgent treat combining the sweet, buttery flavors of butterscotch with the crunchiness of toffee. These bars are soft, chewy, and perfectly golden, making them the ideal dessert for any gathering or a satisfying snack for yourself.
Ingredients
Scale
- 1 cup unsalted butter, melted
- 1 1/2 cups packed brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup butterscotch baking chips
- 3/4 cup toffee bits
Instructions
- Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, letting the edges overhang for easy removal.
- In a large mixing bowl, whisk the melted unsalted butter with packed brown sugar until the mixture is smooth and glossy.
- Add eggs one at a time, mixing well after each addition, then blend in the vanilla extract until thoroughly combined.
- Sift the flour, baking powder, and salt over the wet ingredients and gently fold them into the mixture. Be careful not to overmix.
- Stir in the butterscotch baking chips and toffee bits until evenly distributed.
- Transfer the batter into the prepared pan and smooth the top. Bake for 25-30 minutes or until golden at the edges and just set in the center.
- Allow the bars to cool completely in the pan. Once cooled, lift out using the parchment paper overhang and cut into squares.
Notes
- Ensure not to overbake the bars for the best chewy texture.
- If you want cleaner edges, chill the bars in the refrigerator before cutting.
- These bars can be stored in an airtight container for up to four days at room temperature.
- You can freeze these bars for up to two months by wrapping them tightly.
