Description

The Classic Yule Log, or Bûche de Noël, is a festive holiday dessert featuring a rich chocolate sponge cake, creamy whipped filling, and decadent chocolate buttercream. Perfect for family gatherings, this showstopper dessert is a delightful blend of flavors and textures.

Ingredients

Scale
  • 4 large eggs (separated)
  • 1/2 cup granulated sugar (divided)
  • 1/3 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup unsalted butter (softened)
  • 1 1/2 cups powdered sugar (for buttercream)
  • 1/4 cup cocoa powder (for buttercream)
  • 1 tablespoon milk or cream
  • 1 teaspoon vanilla extract (for buttercream)
  • Fresh cranberries (for decoration)
  • Edible mushrooms or meringue mushroom kit (optional for decoration)
  • Fresh sprigs of rosemary or evergreen (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a bowl, beat egg whites until soft peaks form, then gradually add 1/4 cup of sugar until stiff peaks form.
  3. In a separate bowl, beat egg yolks with the remaining 1/4 cup of sugar until pale and thick. Stir in the vanilla extract.
  4. Sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg yolk mixture.
  5. Fold in the beaten egg whites carefully, ensuring not to deflate the batter.
  6. Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until the cake springs back when touched.
  7. Once baked, immediately roll the cake in a kitchen towel dusted with powdered sugar. Let it cool completely in the towel.
  8. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  9. Once the cake has cooled, gently unroll it and spread the whipped cream evenly across the surface. Roll it back up tightly and wrap it in plastic wrap. Chill for at least an hour.
  10. For the buttercream, beat softened butter with powdered sugar, cocoa powder, and vanilla extract until fluffy. Add milk or cream to adjust consistency.
  11. Unwrap the chilled cake and place it on a serving platter. Frost the entire cake with the chocolate buttercream, creating a bark-like texture with a fork or cake comb.
  12. Decorate the Yule Log with cranberries, rosemary sprigs, and optional meringue mushrooms for a festive touch.
  13. Dust with powdered sugar to resemble fresh snow before serving.

Notes

  • Ensure the cake is fully cooled before unrolling to avoid cracking.
  • Use a chilled bowl and beaters for whipping the cream to ensure stable peaks.
  • If you want a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
  • Feel free to add a mocha twist to the filling by incorporating a little espresso powder into the whipped cream.
  • The Yule Log can be made ahead of time and refrigerated for up to two days.
