Description

Colcannon Soup is a creamy Irish-inspired soup made with tender potatoes, cabbage, onions, and garlic simmered in a rich broth and finished with cream. It delivers classic colcannon flavor in a comforting, spoonable form that is perfect for cozy dinners and cold days.

Ingredients

Scale
  • 2 tbsp unsalted butter: adds richness and classic comfort flavor
  • 1 medium yellow onion, diced: builds a savory aromatic base
  • 3 cloves garlic, minced: enhances depth and aroma
  • 4 cups green cabbage, chopped: provides traditional colcannon texture and mild sweetness
  • 4 medium russet potatoes, peeled and cubed: creates a creamy, hearty base
  • 4 cups vegetable broth: forms the savory soup foundation
  • 1 cup heavy cream: gives the soup a smooth, creamy finish
  • 1 tsp salt: balances and enhances flavors
  • 1/2 tsp black pepper: adds gentle warmth
  • 1/4 cup green onions, sliced: adds freshness and mild onion flavor for garnish

Instructions

  1. Melt the butter in a large pot over medium heat, then add the diced onion and cook until soft and translucent.
  2. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  3. Add the chopped cabbage and cook for 4–5 minutes, stirring occasionally, until slightly softened.
  4. Add the cubed potatoes and pour in the vegetable broth, then bring the mixture to a gentle boil.
  5. Reduce heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.
  6. Use an immersion blender to partially blend the soup until creamy but still slightly chunky.
  7. Stir in the heavy cream, salt, and black pepper, adjusting seasoning to taste.
  8. Simmer for 3–5 more minutes, then serve hot garnished with sliced green onions.

Notes

  • For a lighter soup, replace heavy cream with whole milk or half-and-half.
  • Avoid over-blending to keep the traditional chunky colcannon texture.
  • If the soup thickens too much, add a splash of broth when reheating.
  • Store leftovers in the refrigerator for up to 3 days in an airtight container.
