Description

Cottage Cheese Lava Cake is a unique and irresistible dessert that combines the creaminess of cottage cheese with the rich, molten center of dark chocolate. This indulgent yet healthier twist on a classic dessert is sure to impress any guest or satisfy your own sweet tooth. It’s easy to prepare and perfect for any occasion, offering a perfect balance of flavors and textures.

Ingredients

Scale
  • 1 cup Cottage Cheese: Provides creaminess and a slightly tangy flavor that complements the sweet, molten chocolate center.
  • 4 oz Dark Chocolate: Creates the rich, deep molten lava effect inside the cake.
  • 2 large Eggs: Help bind the ingredients together and give the cake structure.
  • 1/2 cup Sugar: Balances the tangy flavor of the cottage cheese and adds sweetness.
  • 1/4 cup Butter: Adds richness and creates a soft, delicate texture.
  • 1/2 cup Flour: Provides structure and helps the cake set.
  • 1 tsp Vanilla Extract: Enhances the flavor and aroma of the cake.

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your ramekins with butter.
  2. Melt the dark chocolate and butter together until smooth, either in a microwave or using a double boiler.
  3. Whisk the eggs, sugar, and vanilla extract together in a separate bowl until light and fluffy.
  4. Add the melted chocolate mixture to the egg mixture and stir until fully combined.
  5. Fold in the cottage cheese and flour until the batter is smooth.
  6. Pour the batter into the prepared ramekins, filling them three-quarters full.
  7. Bake for 12-15 minutes until the edges are set, but the center remains soft and slightly wobbly.
  8. Let the cakes rest for a couple of minutes before serving to ensure the molten center stays intact when cut.

Notes

  • Do not overbake the cakes. The center must remain molten for the signature lava effect.
  • For a dairy-free version, substitute cottage cheese with plant-based yogurt or dairy-free cream cheese.
  • If making ahead, prepare the batter in advance and refrigerate. Bake for a few extra minutes if baking from cold.
  • Experiment with different types of chocolate (milk or white) for a unique twist.
