Description

Cozy Potato Leek Soup is a comforting, creamy dish that combines tender Yukon Gold potatoes and buttery leeks, making it the perfect soup to warm you up on a cold winter day. It’s rich in flavor, yet simple to make, and it’s vegetarian-friendly too.

Ingredients

Scale
  • 2 tablespoons salted butter (or olive oil for dairy-free option)
  • 2 leeks, sliced (using only the white and light green parts)
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 bunch chives, finely minced
  • 6 Yukon Gold potatoes, peeled and chopped
  • 32 oz chicken broth (or vegetable broth for vegetarian version)
  • ½ cup heavy cream (or coconut milk for dairy-free option)

Instructions

  1. Prepare the leeks by washing them thoroughly and slicing them diagonally. Reserve only the white and light green parts.
  2. Heat a large pot or Dutch oven over medium heat. Add the butter (or olive oil) and melt.
  3. Add the sliced leeks and sauté for 5 minutes until softened.
  4. Stir in the diced onion, garlic, thyme, salt, and pepper. Sauté for an additional 4–5 minutes until the onions are softened.
  5. Add the chopped potatoes and chicken broth. Stir and bring to a gentle boil.
  6. Reduce the heat to low and cover the pot. Let the soup simmer for about 20 minutes until the potatoes are tender.
  7. Remove the soup from the heat. Use an immersion blender to blend the soup, leaving some texture for a hearty consistency.
  8. Once blended, transfer the soup into bowls and garnish with chives, a drizzle of cream, and a pinch of sea salt and black pepper. Serve hot and enjoy!

Notes

  • For a thicker soup, reduce the amount of liquid slightly.
  • If you prefer a chunkier texture, don’t blend the soup completely. Leave some potato chunks for added texture.
  • You can store leftovers in the fridge for up to 3 days or freeze them for later use.
  • This soup can be made dairy-free by using coconut milk or a non-dairy milk of your choice.
