Ingredients
Scale
- 1 lb small potatoes (Yukon or red), about 2″ across
- Olive oil
- Kosher salt
- Sliced cheese (Colby Jack or your choice), cut into small squares
- Light sour cream
- Cooked bacon, chopped
- Sliced green onions
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with aluminum foil.
- Using a sharp knife, make several cuts through each potato, avoiding cutting all the way down. Place the potatoes on the baking sheet and rub them with olive oil. Sprinkle with salt.
- Bake for 30 minutes, or until the potatoes are tender.
- Place cheese squares in between a few of the cuts on each potato and return to the oven for an additional 5-10 minutes, until cheese has melted.
- Let the potatoes cool for 10 minutes before topping with sour cream, chopped bacon, and green onions.
- Serve warm or at room temperature and enjoy!
Notes
- For extra crispiness, bake the potatoes for a few more minutes after adding the cheese.
- Feel free to use any cheese of your choice, such as cheddar or mozzarella.
- Leftovers can be stored in the refrigerator for up to 2 days. Reheat them in the oven to restore their crispiness.
