Description

Cucumber Slices With Herb and Garlic Cheese are a fresh, crisp, and creamy appetizer made with crunchy cucumber rounds topped with a flavorful herb and garlic cheese spread. This easy no-cook recipe is perfect for parties, healthy snacks, low-carb diets, or elegant appetizer platters. The combination of refreshing cucumbers, aromatic herbs, and creamy cheese creates a light yet satisfying bite that can be prepared in minutes.

Ingredients

Scale
  • 2 large cucumbers, sliced into 1/4-inch rounds
  • 8 oz cream cheese, softened
  • 2 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the cucumbers thoroughly under cold water and pat them dry with a clean kitchen towel.
  2. Slice the cucumbers into even 1/4-inch thick rounds and place them on a plate lined with paper towels to remove excess moisture.
  3. In a medium mixing bowl, combine the softened cream cheese, minced garlic, chopped parsley, dill, and chives.
  4. Add lemon juice, olive oil, salt, and black pepper to the bowl.
  5. Mix everything together until the herb and garlic cheese mixture becomes smooth and creamy.
  6. Arrange the cucumber slices in a single layer on a serving platter.
  7. Using a spoon or piping bag, place a small amount of the herb and garlic cheese mixture on top of each cucumber slice.
  8. Gently spread or pipe the mixture so it sits neatly on the cucumber rounds.
  9. Garnish with extra chopped herbs or a sprinkle of black pepper if desired.
  10. Refrigerate for 10–15 minutes before serving to allow the flavors to blend and the topping to firm slightly.

Notes

  • Use English cucumbers or Persian cucumbers for the best crisp texture and fewer seeds.
  • Pat cucumber slices dry before adding the topping to prevent excess moisture.
  • The herb and garlic cheese mixture can be made up to 2 days in advance and stored in the refrigerator.
  • For a decorative presentation, pipe the cheese mixture using a star-tip piping bag.
  • Top with cherry tomatoes, smoked salmon, or bacon bits for extra flavor variations.
  • For a lighter version, substitute cream cheese with Greek yogurt or light cream cheese.
