Description

Dark Chocolate Cranberry Oatmeal Cookies are a healthy and delicious treat, combining the chewy texture of oats with the tartness of fresh cranberries and the richness of dark chocolate. These cookies are perfect for any occasion, offering a guilt-free indulgence that’s naturally sweetened with pure maple syrup and free from refined sugars.

  • 1 cup (100g) instant oats
  • ¾ cup (90g) whole wheat flour
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120mL) pure maple syrup
  • ½ cup (55g) fresh cranberries, chopped
  • 3 tbsp (42g) chopped dark chocolate

Instructions

  1. Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together the oats, whole wheat flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the melted coconut oil (or unsalted butter), egg, and vanilla. Stir in the maple syrup.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped cranberries and 2 ½ tablespoons of chopped dark chocolate. Ensure everything is evenly mixed.
  6. Chill the dough in the refrigerator for at least 30 minutes to firm it up.
  7. Scoop the dough into 15 rounded portions and flatten them on the baking sheet to your desired thickness.
  8. Press the remaining dark chocolate chunks into the tops of each cookie.
  9. Bake at 325°F for 9-12 minutes or until the edges are golden. The center should remain soft.
  10. Let the cookies cool on the pan for 10 minutes before transferring them to a wire rack to cool completely.
