Description

Easter Bunny Potato Croquettes are crispy, golden mashed potato bites shaped like adorable bunnies, making them a fun and festive side dish for Easter brunch or dinner. With a creamy potato interior and crunchy breadcrumb coating, these croquettes are easy to make, kid-friendly, and perfect for holiday gatherings.

Ingredients

Scale
  • 2 cups mashed potatoes (about 3–4 medium potatoes)
  • 1 large egg
  • 2 tablespoons butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Small carrot pieces (for bunny noses)
  • Peppercorns or edible decorations (for bunny eyes)
  • Optional: 2 tablespoons chopped parsley or chives

Instructions

  1. Peel and boil the potatoes in salted water until fork-tender, about 15 minutes.
  2. Drain the potatoes well and mash them while still warm with butter, salt, and black pepper until smooth.
  3. Allow the mashed potatoes to cool slightly, then mix in the egg and flour until a thick dough-like mixture forms.
  4. Scoop small portions of the potato mixture and shape them into oval forms. Pinch the top slightly to form bunny ears.
  5. Roll each croquette gently in breadcrumbs until evenly coated.
  6. Heat vegetable oil in a deep skillet over medium-high heat.
  7. Carefully place the croquettes in the hot oil and fry for 2–3 minutes per side until golden brown and crispy.
  8. Remove from the oil and place on paper towels to drain excess oil.
  9. Decorate the croquettes with carrot pieces for noses and peppercorns for eyes to create bunny faces.
  10. Serve warm as a festive Easter appetizer or side dish.

Notes

  • Use thick mashed potatoes to prevent the croquettes from falling apart.
  • Chill the shaped croquettes for 15–20 minutes before frying to help them hold their shape.
  • For a lighter version, bake at 400°F (200°C) for 20–25 minutes until golden.
  • Air frying is another option; cook at 375°F for about 12–15 minutes.
  • Add shredded cheese to the potato mixture for a richer flavor.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in an oven or air fryer.
