Description

Easter Sugar Cookie Cups are a fun and festive treat perfect for your holiday celebrations. These soft and sweet sugar cookie cups are filled with fluffy, colorful frosting and topped with Easter egg candies. They are quick, easy, and sure to be a crowd-pleaser at any gathering.

Ingredients

Scale
  • 1 roll Pillsbury Sugar Cookie Dough (16.5 oz)
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon kosher salt
  • 2 tablespoons milk
  • 1–2 drops green food coloring (optional)
  • 1/2 cup Easter egg candies (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a regular muffin tin with baking spray.
  2. Place one section of Pillsbury sugar cookie dough into each muffin tin well.
  3. Bake for 10-14 minutes or until the edges are lightly browned. The cookie dough should hold its shape well, creating a small cup in the center.
  4. After baking, immediately press down the centers of the cookies with a tart shaper or the bottom of a spice jar to create space for the frosting. Let the cookies cool in the tin for 5 minutes before carefully removing them.
  5. Allow the cookies to cool completely on a wire rack before decorating.
  6. Beat the softened butter until light and fluffy. Gradually add powdered sugar, mixing in vanilla extract, salt, and milk until the frosting reaches your desired consistency.
  7. Add green food coloring to the frosting if you want to give it a grass-like appearance.
  8. Pipe the frosting into the cooled sugar cookie cups, filling the center. Top each with three colorful Easter egg candies.

Notes

  • To save time, you can use pre-made frosting.
  • Let the cookies cool completely before adding frosting to prevent it from melting into the cookie.
  • Store leftover cookies in an airtight container for up to 3 days.
