Ingredients
Scale
- 6 chicken thighs, bone-in, skin-on
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 4 cloves garlic, crushed
- 1 tablespoon black peppercorns
- 4 bay leaves
Instructions
- Combine chicken thighs, soy sauce, white vinegar, garlic, black peppercorns, and bay leaves in a large bowl. Marinate for at least 4 hours, preferably overnight.
- Preheat oven to 375°F (190°C).
- Transfer the marinated chicken and sauce to a large Dutch oven. Place chicken skin-side down and cover the pot.
- Bake covered for 30 minutes, then uncover and flip the chicken. Baste with sauce and cook uncovered for an additional 30 minutes until the chicken is golden and the sauce has reduced.
- Garnish with chopped green onions and serve hot over steamed white rice.
Notes
- Use bone-in, skin-on chicken for the juiciest results.
- Marinate for at least 4 hours, but overnight is recommended for the best flavor.
- If using chicken breasts, be mindful of the cooking time to prevent them from drying out.
- If you want a richer sauce, you can add a tablespoon of brown sugar for sweetness.
- This recipe can be cooked in a slow cooker or Instant Pot for convenience.
