  • 2 cups thick coconut yogurt or Greek yogurt
  • 5 tbsp protein powder (optional)
  • 34 tbsp maple syrup or honey
  • A pinch of sea salt
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (optional)
  • 1/4 cup peanut butter (optional)
  • 2 tbsp protein powder (optional, for peanut butter cups)

Instructions

  1. Start by preparing the peanut butter cups (optional). Melt the chocolate chips in a small bowl and pour a little into mini muffin pans or candy molds. Freeze for a few minutes until firm.
  2. In another small bowl, mix peanut butter and protein powder (optional). Spoon this mixture over the set chocolate, then top with more melted chocolate. Freeze for an hour or until firm.
  3. In a large bowl, mix together the yogurt, honey or maple syrup, and protein powder (if using). Stir until smooth.
  4. Pour the yogurt mixture into a parchment-lined loaf pan or silicone mold. If you made peanut butter cups, chop them up and fold them into the yogurt or sprinkle them on top.
  5. Freeze the bars for at least 5 hours or until completely solid. Once frozen, let the bars sit for 5–10 minutes at room temperature for easier cutting.
  6. Slice the bars into even pieces and store in an airtight container in the freezer. For the creamiest texture, let them thaw for a few minutes before eating.

Notes

  • Use thick, full-fat yogurt for the best texture. Greek yogurt or coconut yogurt works well.
  • The protein powder is optional but adds extra protein and helps with texture.
  • For vegan options, use dairy-free yogurt and a plant-based protein powder.
  • Store the bars in an airtight container in the freezer for up to 3 months.
  • For easier slicing, run your knife under hot water before cutting the bars.
