Description

Grasshopper Pie is a classic no-bake dessert made with a crunchy chocolate cookie crust and a light, creamy mint chocolate filling. This refreshing pie is easy to prepare, perfect for holidays and gatherings, and delivers a smooth mousse-like texture with a cool mint flavor.

Ingredients

Scale
  • 24 chocolate sandwich cookies, crushed (about 2 cups crumbs): forms the chocolate crust base
  • 6 tablespoons unsalted butter, melted: binds the cookie crust
  • 4 cups mini marshmallows (about 200 g): creates the fluffy structure of the filling
  • 1/2 cup whole milk: helps melt marshmallows smoothly
  • 1 teaspoon mint extract: provides classic mint flavor
  • 6–8 drops green food coloring: gives the traditional green color
  • 1 cup heavy whipping cream (240 ml): adds lightness and volume
  • 1/2 cup mini chocolate chips (85 g): adds texture and chocolate flavor

Instructions

  1. Crush the chocolate sandwich cookies into fine crumbs and mix with melted butter until evenly combined. Press firmly into a 9-inch pie dish, covering the bottom and sides. Refrigerate while preparing the filling.
  2. In a saucepan over low heat, combine the mini marshmallows and milk. Stir constantly until the marshmallows are fully melted and the mixture is smooth. Remove from heat and let cool slightly.
  3. Stir the mint extract into the marshmallow mixture, then add green food coloring until the desired color is reached.
  4. In a separate bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cooled marshmallow mixture until fully combined and fluffy.
  6. Fold in the mini chocolate chips.
  7. Pour the filling into the prepared crust and smooth the top.
  8. Refrigerate for at least 4 hours, or until fully set, before slicing and serving.

Notes

  • Allow the marshmallow mixture to cool slightly before folding in whipped cream to avoid deflating the filling.
  • For clean slices, dip a knife in hot water and wipe dry between cuts.
  • The pie can be frozen for 1–2 hours for a firmer, ice-cream-like texture.
  • Store covered in the refrigerator for up to 3 days.
