Description

This Ground Turkey Taco Skillet is a quick, healthy, and flavorful one-pan dinner made with lean ground turkey, beans, corn, salsa, and topped with crunchy tortilla chips and melted cheese. Ready in under 30 minutes, it’s perfect for busy weeknights and meal prep.

Ingredients

Scale
  • 1 teaspoon olive oil: for sautéing and flavor
  • 1 small onion, chopped: adds sweetness and depth
  • 2 cloves garlic, minced: infuses the dish with aromatic flavor
  • 1 pound 93% lean ground turkey: lean protein base
  • 1 tablespoon tomato paste: adds richness and thickness
  • 1 tablespoon taco seasoning: provides bold Mexican flavor
  • 1/4 cup water: loosens mixture and helps distribute spices
  • 1 (15 oz) can pinto beans, drained and rinsed: adds fiber and creamy texture
  • 1 cup frozen corn kernels: adds sweetness and texture
  • 1/2 cup salsa: ties all flavors together with moisture and spice
  • 1 ounce tortilla chips, crushed (about a handful): provides crunch
  • 1/2 cup shredded Mexican cheese blend: melts for cheesy finish
  • Chopped fresh cilantro (for garnish): adds freshness and brightness

Instructions

  1. Heat olive oil in a large nonstick skillet over medium heat.
  2. Add chopped onion and cook for 3–4 minutes until soft.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Add ground turkey and cook until no longer pink, breaking it apart with a spoon (5–6 minutes).
  5. Mix in tomato paste and taco seasoning until turkey is well-coated.
  6. Pour in water and stir, letting the mixture simmer for 2 minutes.
  7. Add drained pinto beans and corn, stirring to combine. Cook for 3–5 minutes to heat through.
  8. Stir in salsa and simmer for another 2–3 minutes.
  9. Top with crushed tortilla chips and sprinkle with shredded cheese.
  10. Cover and let cheese melt for 2–3 minutes.
  11. Garnish with chopped cilantro and serve hot.

Notes

  • Use fresh corn if available for extra sweetness.
  • Swap pinto beans with black beans or kidney beans for variety.
  • Add jalapeños or hot salsa for a spicier version.
  • Leave out the chips for a low-carb option.
  • Great for meal prep — store without chips and cheese for best texture when reheating.
