Description

Guinness and Irish Chedddar Macaroni and Cheese is a rich, creamy baked pasta made with sharp Irish white cheddar and smooth Guinness stout for a bold, comforting twist on classic mac and cheese. Perfect for holidays, family dinners, or cozy nights in.

Ingredients

Scale
  • 12 ounces elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, warmed
  • 3/4 cup Guinness stout
  • 3 cups freshly shredded Irish white cheddar cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded Irish cheddar or 1/3 cup breadcrumbs (optional topping)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish. Bring a large pot of salted water to a boil and cook the elbow macaroni until al dente. Drain and set aside.
  2. In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1–2 minutes until lightly golden, stirring constantly to form a roux.
  3. Slowly whisk in the warmed milk, stirring continuously until the mixture thickens and begins to gently bubble.
  4. Gradually pour in the Guinness stout while whisking, and cook for another 2–3 minutes until smooth and slightly thickened.
  5. Reduce heat to low and stir in the shredded Irish cheddar one handful at a time, mixing until fully melted and smooth.
  6. Add Dijon mustard, salt, and black pepper. Taste and adjust seasoning if needed.
  7. Fold the cooked macaroni into the cheese sauce, ensuring all pasta is evenly coated.
  8. Transfer the mixture to the prepared baking dish. Sprinkle additional cheddar or breadcrumbs on top if desired.
  9. Bake for 20–25 minutes, or until bubbly and golden on top. Let rest for 5–10 minutes before serving.

Notes

  • Shred cheese from a block for the smoothest sauce; pre-shredded cheese may result in a grainy texture.
  • Do not overheat after adding cheese to prevent separation.
  • For extra flavor, add crispy bacon or caramelized onions before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat with a splash of milk to maintain a creamy consistency.
