Description

Guinness Braised Beef Pot Pie is a rich and hearty comfort food made with tender slow-braised beef cooked in Guinness stout, vegetables, and herbs, all baked under a flaky golden pie crust. The deep stout gravy and melt-in-your-mouth beef create a satisfying filling that pairs perfectly with buttery pastry, making this classic pot pie ideal for cozy family dinners and cold-weather meals.

Ingredients

Scale
  • 2 lbs beef chuck roast, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup Guinness stout beer
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 2 bay leaves
  • 2 tablespoons butter
  • 1 prepared pie crust (or puff pastry)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare all vegetables by chopping them into small even pieces.
  2. Season the beef cubes with salt and black pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat and sear the beef in batches until browned on all sides.
  4. Remove the beef from the pot and set it aside.
  5. In the same pot, add diced onion, carrots, and celery. Cook for about 5 minutes until softened.
  6. Add minced garlic and tomato paste, stirring for about 1 minute until fragrant.
  7. Sprinkle flour over the vegetables and mix well to coat evenly.
  8. Slowly pour in the Guinness stout while stirring and scraping the bottom of the pot to release browned bits.
  9. Add beef broth, Worcestershire sauce, thyme, and bay leaves, then return the seared beef to the pot.
  10. Bring the mixture to a gentle simmer, cover, and transfer to the oven. Braise for about 1½ to 2 hours until the beef is fork-tender.
  11. Remove bay leaves and stir in butter to enrich the sauce if needed.
  12. Transfer the braised beef filling to a baking dish and allow it to cool slightly.
  13. Roll out the pie crust and place it over the filling. Trim edges and crimp if desired.
  14. Cut small slits in the crust to release steam and brush with beaten egg.
  15. Bake for 35–40 minutes until the crust is golden brown. Let rest for 10 minutes before serving.

Notes

  • Sear the beef well before braising to build deeper flavor in the sauce.
  • If the filling becomes too thick, add a small amount of beef broth to loosen the gravy.
  • The filling can be prepared one day ahead and refrigerated for easier assembly.
  • Puff pastry can be used instead of pie crust for a lighter, flakier topping.
  • Allow the pot pie to rest after baking so the filling thickens and slices cleanly.
