Description

Guinness Brownies are rich, ultra-fudgy chocolate brownies made with Guinness stout to enhance deep cocoa flavor and create a moist, bakery-style texture without a strong beer taste.

Ingredients

  • Guinness stout (1 cup): adds depth and enhances chocolate flavor
  • Unsalted butter (3/4 cup): provides richness and fudgy texture
  • Dark chocolate, chopped (6 oz): creates intense chocolate flavor
  • Unsweetened cocoa powder (1/2 cup): boosts chocolate depth
  • Granulated sugar (1 cup): sweetens and balances bitterness
  • Brown sugar (1/2 cup): adds moisture and subtle caramel notes
  • Eggs (3 large): bind ingredients and create structure
  • Vanilla extract (2 tsp): rounds out and enhances flavor
  • All-purpose flour (3/4 cup): provides structure without cakiness
  • Salt (1/2 tsp): balances sweetness and sharpens flavor

Instructions

  1. Simmer the Guinness stout in a saucepan over medium heat until reduced to about half, then set aside to cool slightly.
  2. Melt the butter and dark chocolate together over low heat or in short microwave intervals, stirring until smooth.
  3. Whisk the cocoa powder into the melted chocolate mixture until fully combined.
  4. Add granulated sugar and brown sugar to the chocolate mixture and stir until smooth.
  5. Mix in the eggs one at a time, stirring well after each addition.
  6. Stir in the vanilla extract and reduced Guinness until fully incorporated.
  7. Gently fold in the flour and salt just until combined, avoiding overmixing.
  8. Pour the batter into a lined baking pan and spread evenly.
  9. Bake at 350°F (175°C) until the center is just set and a toothpick comes out with moist crumbs.
  10. Allow the brownies to cool completely before slicing.

Notes

  • Do not overbake to keep the brownies fudgy.
  • Use high-quality cocoa powder and chocolate for best flavor.
  • Flavor improves after resting for several hours or overnight.
  • Can substitute brewed coffee for Guinness if avoiding alcohol.
