- 1 teaspoon cardamom
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 1/2 teaspoon turmeric
- 2 teaspoons coriander
- 2 teaspoons garam masala
- 2 cups water
- 1/2 cup tomato puree
- 1/2 cup Greek yogurt

- Add chopped onions and cook for 8-10 minutes until softened and lightly browned.
- Stir in minced ginger and garlic. Cook for 2 minutes until fragrant.
- Add the lamb pieces and brown on all sides for about 8-10 minutes.
- Stir in cardamom, cinnamon, salt, turmeric, coriander, and garam masala. Cook for another 2 minutes to coat the lamb with spices.
- Pour in water and tomato puree. Bring to a simmer, then reduce heat and cook on medium-low for 45 minutes or until the lamb is fork-tender.
- Stir in Greek yogurt just before serving. Garnish with cilantro if desired.
Notes
- If you prefer a spicier curry, add more chili powder or fresh chilies.
- You can substitute Greek yogurt with coconut milk for a dairy-free option.
- If you’re using bone-in lamb, you may need to cook a little longer until the lamb is tender.
- This curry tastes even better the next day, as the flavors deepen over time.
