Description

Keto Chicken Parmesan is a low-carb version of the traditional chicken parmesan, featuring crispy breaded chicken, marinara sauce, and two kinds of cheese, perfect for anyone following a keto or low-carb diet.

Ingredients

Scale
  • 6 small chicken breasts (1 1/2 pounds)
  • 1/2 teaspoon salt
  • 2 cups almond flour
  • 3 large eggs
  • 1/2 cup parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons oil (peanut oil or safflower oil)
  • 2 cups keto marinara sauce (sugar-free)
  • 1 1/2 cups mozzarella cheese (freshly sliced)
  • 1/3 cup parmesan cheese (for topping)

Instructions

  1. Pound the chicken breasts until ¼ inch in thickness. Sprinkle with salt and lightly coat both sides of the chicken with almond flour.
  2. In a small bowl, whisk the eggs. In another bowl, mix almond flour, parmesan cheese, garlic powder, and onion powder. Dip the chicken into the egg mixture, then coat with the dry mixture until fully covered.
  3. Heat oil in a pan over medium heat. Fry the chicken for 2-3 minutes until golden brown on each side. Transfer the chicken to a plate covered with paper towels to soak up excess oil.
  4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place the chicken on it.
  5. Top each piece of chicken with marinara sauce, mozzarella cheese, and a sprinkle of parmesan cheese.
  6. Bake for 10-15 minutes, or until the cheese is melted and slightly golden on top.
  7. Remove from the oven and serve immediately.

Notes

  • For extra crispiness, ensure the oil is hot before adding the chicken.
  • If you prefer a dairy-free version, substitute with vegan cheese.
  • This recipe can be made ahead by preparing the chicken up to the frying step, then baking it when ready to serve.
  • If you prefer a baked version, bake the chicken at 350°F (180°C) for 20 minutes, flipping halfway through.
