Description

Lemon bread with glaze is a simple, moist, and tangy dessert that combines the refreshing flavors of lemon with a buttery, sugary glaze. It’s easy to make and perfect for any occasion.

Ingredients

Scale
  • 1/2 cup butter (softened)
  • 1 cup white sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 tablespoon lemon juice
  • 3 tablespoons lemon zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup white sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)
  • 1 teaspoon salted butter (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Cream together butter and sugar in a large mixing bowl until smooth and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Mix in the milk, lemon juice, and lemon zest until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the bread is baking, prepare the glaze by microwaving the sugar, lemon juice, and butter until the sugar dissolves and the glaze is smooth.
  9. Pour the hot glaze over the warm bread, ensuring it soaks into the loaf.
  10. Allow the bread to cool for 20 minutes in the pan before transferring to a cooling rack to cool completely.

Notes

  • Ensure the bread is still warm when you pour the glaze for the best absorption.
  • If you prefer a gluten-free version, substitute the all-purpose flour with a gluten-free blend.
  • The bread can be stored in an airtight container for up to three days or frozen for later use.
