Description

Soft and fluffy lemon poppy seed cupcakes topped with a naturally flavored blackberry buttercream frosting. These cupcakes combine bright citrus flavor, delicate crunch from poppy seeds, and a lightly tart berry frosting for a bakery-style dessert that is perfect for spring and summer occasions.

  • 1/2 cup (113 g) unsalted butter, softened
  • 3/4 cup (150 g) granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon zest
  • 1/4 cup (60 ml) fresh lemon juice
  • 1/2 cup (120 ml) milk
  • 1/2 cup (113 g) unsalted butter, softened (for frosting)
  • 2 1/2 cups (300 g) powdered sugar
  • 1/2 cup (75 g) blackberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together the flour, baking powder, salt, and poppy seeds.
  3. In a separate large bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Mix in the lemon zest and lemon juice until fully incorporated.
  6. Alternate adding the dry ingredients and milk to the batter, mixing just until combined.
  7. Divide the batter evenly between the cupcake liners, filling each about two-thirds full.
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cupcakes to cool completely before frosting.
  10. To make the frosting, cook the blackberries over medium heat until soft and juicy, then strain and cool completely.
  11. Beat the butter until smooth, then gradually add powdered sugar and the cooled blackberry puree until creamy.
  12. Frost the cooled cupcakes and serve.
