Description

Marry Me Tortellini is an easy, one-pot vegetarian pasta dish that combines tender cheese tortellini in a creamy sun-dried tomato sauce with garlic, spinach, and Parmesan. Inspired by the viral Marry Me Chicken, this dish is quick, satisfying, and perfect for weeknight meals. The blend of flavors and creamy texture makes every bite irresistibly delicious.

  • 2 tablespoons Olive Oil
  • 6 Garlic Cloves, minced
  • ½ cup Sun-Dried Tomatoes in oil
  • 1 teaspoon Italian Seasoning
  • 1 pinch Red Pepper Flakes
  • 2 tablespoons Flour
  • 2 cups Pacific Vegetable Broth
  • 20 oz Fresh Cheese Tortellini
  • ½ cup Heavy Cream
  • 5 cups Fresh Spinach
  • 1 cup Parmigiano, grated

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Add garlic, sun-dried tomatoes (and their oil), Italian seasoning, and red pepper flakes. Cook for 3-4 minutes until garlic is fragrant.
  2. Add flour and cook for 3 minutes, stirring to create a roux.
  3. Pour in vegetable broth, bring to a boil, and let it simmer for 3-5 minutes until the sauce thickens.
  4. Stir in the tortellini and a pinch of salt. Cook until the tortellini is tender, about 5-7 minutes.
  5. Turn off the heat and stir in the heavy cream, Parmigiano, and spinach. Stir until the spinach wilts and the sauce becomes creamy.
  6. Season with salt and pepper to taste. Serve hot and enjoy!

Notes

  • If the sauce is too thick, add a little more vegetable broth or milk to adjust the consistency.
  • For extra creaminess, consider adding cream cheese to the sauce.
  • Feel free to swap out spinach for kale or another leafy green of your choice.
  • If you want a spicier kick, increase the amount of red pepper flakes.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently with a splash of cream or broth.
