Description
McGriddle Bites are a delicious combination of fluffy pancake muffins filled with savory breakfast sausage, melted cheddar cheese, and sweet maple syrup. These easy-to-make mini muffins are the perfect bite-sized breakfast that can be prepped ahead of time and enjoyed throughout the week.
Ingredients
Scale
- 2 cups Hungry Jack Pancake Mix
- 1 1/2 cups water
- 1 lb breakfast sausage
- 1 cup shredded cheddar cheese
- 1/4 cup maple syrup
Instructions
- Brown the breakfast sausage in a skillet over medium heat. Drain the grease and set aside.
- In a large mixing bowl, combine the pancake mix and water according to the instructions on the box. Stir until a smooth batter forms.
- Add the cooked sausage, shredded cheddar cheese, and maple syrup to the pancake batter. Stir until everything is well combined.
- Scoop the batter into a mini muffin pan, filling each cup a little over halfway. This recipe makes about 48 mini muffins.
- Place the muffin pan into a preheated oven at 400°F (200°C). Bake for 12-15 minutes, or until the muffins are golden brown on top.
- Allow the McGriddle Bites to cool for a few minutes before serving. Enjoy with scrambled eggs and extra syrup for dipping.
Notes
- Use freshly shredded cheddar cheese for the best flavor and texture.
- If you don’t have a mini muffin pan, a regular muffin pan can be used. Just increase the baking time to 18-20 minutes.
- These McGriddle Bites freeze well. After baking, cool completely, store in a freezer bag, and reheat in the microwave for 30-60 seconds when ready to eat.
- Feel free to experiment with other types of sausage like turkey or chicken for a leaner option.
