Description

  • 2 cups cantaloupe, cut into cubes
  • 1 cup cherry tomatoes, halved
  • 12 seedless cucumbers, peeled and cut into cubes
  • 12 avocados, chopped
  • 8 oz block feta cheese, cut into cubes
  • 2 tablespoons fresh herbs (mint, basil, chives), chopped
  • Salt and pepper, to taste
  • 2 tablespoons champagne vinegar
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons hot honey
  • 1 garlic clove, freshly grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup olive oil

Instructions

  1. Cut the watermelon, cantaloupe, cucumber, and feta into uniform cubes. Halve the cherry tomatoes and chop the avocado just before serving.
  2. Arrange the melon, cucumber, and feta cubes on a large platter, alternating colors to form a mosaic pattern.
  3. Tuck cherry tomatoes and avocado pieces between the melon cubes for color and texture contrast.
  4. Sprinkle with salt and pepper to season evenly.
  5. In a small bowl, whisk together champagne vinegar, lemon juice, hot honey, grated garlic, salt, and pepper until smooth.
  6. Slowly stream in olive oil while whisking to create a well-emulsified vinaigrette.
  7. Drizzle the hot honey vinaigrette over the salad.
  8. Top with chopped fresh herbs and serve immediately for the freshest flavor.
