Description

This Out-of-this-World Corn Dip is a creamy, flavorful appetizer that combines sweet corn, spicy jalapeños, and tangy sour cream. Perfect for any gathering, it’s a crowd-pleaser with the right balance of savory, sweet, and heat. Easy to make with simple ingredients, this dip is ideal for serving with chips, crackers, or fresh veggies.

Ingredients

Scale
  • 3 (11 oz) cans MexiCorn (sweet corn & diced red and green peppers), drained
  • 1 (7 oz) can chopped green chiles
  • 1 (6 oz) can chopped jalapeno peppers, drained and liquid added to taste
  • 1/2 cup chopped green onion
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 (16 oz) package shredded sharp cheddar cheese
  • 2–3 bags Fritos Scoops corn chips (for serving)

Instructions

  1. In a large mixing bowl, combine the MexiCorn, chopped green chiles, chopped jalapeños, green onions, mayonnaise, sour cream, black pepper, garlic powder, and shredded cheddar cheese.
  2. Stir the ingredients together until well combined, making sure everything is evenly distributed.
  3. Cover the bowl and refrigerate for at least two hours, or overnight for the best flavor.
  4. Serve chilled with Fritos Scoops corn chips or your favorite dipping option.

Notes

  • Make sure to drain the canned ingredients thoroughly to avoid a watery dip.
  • For a spicier dip, increase the amount of jalapeños or add hot sauce to taste.
  • It’s best to prepare the dip ahead of time, as the flavors meld together the longer it sits.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
  • To make it healthier, add diced vegetables like bell peppers or cauliflower.
