Ingredients
Scale
- 8 oz cream cheese (softened to room temperature)
- 8 oz vegetable cream cheese
- 2 Tablespoons Hidden Valley Spicy Ranch mix (or regular ranch)
- 3 green onions, sliced (green parts only)
- 1 red pepper, finely diced (save the stem)
- 2 cups shredded sharp cheddar cheese (divided use)
Instructions
- Finely chop the red pepper and green onions. Save the stem of the red pepper for decoration.
- In an electric or stand mixer, combine the cream cheese and vegetable cream cheese until smooth.
- Stir in the ranch mix, green onions, and red pepper until evenly distributed.
- Fold in 1 cup of shredded cheddar cheese to the mixture.
- Lay a large sheet of plastic wrap and sprinkle about 1/4 cup of the shredded cheddar cheese onto it.
- Top with the cheeseball mixture and form into a ball shape.
- Sprinkle the remaining shredded cheddar cheese on top and around the sides of the cheeseball.
- Wrap the cheeseball tightly in plastic wrap and secure it with rubber bands or kitchen twine to create the pumpkin indentations.
- Refrigerate for at least 2 hours, preferably overnight.
- Before serving, carefully remove the plastic wrap and rubber bands, then insert the red pepper stem into the top to create the pumpkin shape.
- Serve with crackers, vegetable sticks, or your favorite dippers.
Notes
- Freshly grated cheddar cheese is preferred for a better texture and easier shaping.
- To make ahead, prepare the cheeseball a day or two in advance and refrigerate until ready to serve.
- If you want a spicier cheeseball, add diced jalapeños or a pinch of cayenne pepper to the mixture.
- Store leftovers in an airtight container in the fridge for up to 3 days.
