Description

Roasted Asparagus and Radishes with Mustard Vinaigrette is a healthy, vibrant dish that combines roasted vegetables with a tangy mustard vinaigrette, creating a delicious balance of flavors. This easy-to-make recipe is perfect for any occasion, whether it’s a quick weeknight dinner or a special celebration.

Ingredients

Scale
  • 1 bunch Asparagus (about 1 lb): Tender and earthy vegetable.
  • 1 bunch Radishes (about 12–14 radishes): Peppery and crunchy texture.
  • 2 tbsp Olive Oil: Helps with roasting and adds healthy fats.
  • 2 tbsp Dijon Mustard: Tangy and sharp flavor base for vinaigrette.
  • 2 tbsp Apple Cider Vinegar: Adds mild, fruity acidity.
  • 1 tbsp Honey: Sweetens and balances the mustard vinaigrette.
  • 2 cloves Garlic, minced: Fresh garlic adds aromatic depth to the dressing.
  • Salt & Pepper to taste: Seasoning to taste, enhancing the natural flavors of the vegetables and vinaigrette.

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the woody ends off the asparagus and slice the radishes into halves or quarters.
  3. Place the asparagus and radishes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
  4. Roast for 15-20 minutes until vegetables are tender and golden brown.
  5. While vegetables are roasting, whisk together Dijon mustard, apple cider vinegar, honey, garlic, salt, and pepper in a small bowl.
  6. Slowly drizzle in olive oil while whisking to create a smooth vinaigrette.
  7. Once vegetables are done, transfer to a serving platter and drizzle with the mustard vinaigrette. Toss gently to coat and serve immediately.

Notes

  • Ensure vegetables are evenly spread on the baking sheet to prevent steaming.
  • For a spicier kick, add red pepper flakes or hot sauce to the vinaigrette.
  • This recipe can be made ahead. Simply store roasted vegetables and vinaigrette separately, then combine when ready to serve.
  • If you prefer a vegan-friendly option, swap honey with maple syrup or agave nectar.
