Description

These crispy and tangy Salt and Vinegar Zucchini Chips are the perfect healthy snack for anyone looking for a low-carb, keto-friendly alternative to traditional chips. With simple ingredients and easy preparation methods like dehydrating, air frying, or baking, they deliver that satisfying crunch with a burst of salt and vinegar flavor.

Ingredients

Scale
  • 8 ounces zucchini, thinly sliced (about 2 medium zucchinis)
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons coarse sea salt

Instructions

  1. Use a mandolin or sharp knife to slice the zucchini as thin as possible.
  2. In a small bowl, whisk together the olive oil and white balsamic vinegar.
  3. Toss the zucchini slices in the oil and vinegar mixture until evenly coated.
  4. Arrange the zucchini slices in a single layer on the trays of a dehydrator or on a parchment-lined baking sheet.
  5. For the dehydrator: Set the temperature to 135°F and dehydrate for 8 to 14 hours, depending on the thickness of the slices.
  6. For the oven: Bake at 200°F for 2-3 hours, rotating the trays halfway through.
  7. For the air fryer: Preheat to 250°F, arrange zucchini slices in the basket, and air fry for 10 minutes. Flip the chips and air fry for another 10-15 minutes until crispy.
  8. Once cooked, sprinkle the zucchini chips with coarse sea salt while still warm.
  9. Allow the chips to cool completely before serving or storing them in an airtight container to keep crispy.

Notes

  • For extra crispiness, make sure your zucchini slices are very thin.
  • If using the oven or air fryer, keep an eye on the chips towards the end to avoid burning them.
  • To store, keep the chips in an airtight container to preserve their crunch.
  • Experiment with different types of vinegar to change the flavor profile (e.g., apple cider vinegar or rice wine vinegar).
