- 1 lb Pork Kielbasa, sliced
- 2 medium Sweet Potatoes, cubed
- 2 medium Potatoes, cubed
- 1 cup Broccoli florets
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
- 2 tbsp Unsalted Butter
- 1/4 cup Honey
- 2 tbsp Brown Sugar
- 1 tbsp Dijon Mustard
- 2 cloves Garlic, minced
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
Instructions
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper for easy cleanup.
- In a small bowl, whisk together honey, garlic, brown sugar, Dijon mustard, basil, oregano, and melted butter.
- Drizzle olive oil over the potatoes and sweet potatoes on the sheet pan. Season with salt and pepper. Roast for 20 minutes.
- Add sliced kielbasa to the pan and brush with most of the honey garlic sauce, leaving a little for later. Roast for another 10 minutes.
- Add broccoli to the pan, toss gently, and roast for another 5-10 minutes, or until the kielbasa is browned and vegetables are tender.
- Brush the kielbasa with the remaining honey garlic sauce and serve immediately.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- Make sure to leave enough space on the sheet pan for even roasting.
- You can substitute the kielbasa with chicken sausage or a vegetarian option like tofu for a different take.
