  • 1 1/2 cups (190g) all-purpose flour: builds structure
  • 1/2 cup (100g) granulated sugar: sweetens the muffins
  • 1/4 cup (50g) brown sugar: adds moisture and depth
  • 2 large eggs: binds ingredients and adds richness
  • 1/2 cup (120ml) melted butter or oil: creates a tender texture
  • 1 tsp baking soda: helps muffins rise
  • 1/2 tsp salt: enhances flavor
  • 1 tsp vanilla extract: adds aroma
  • 3/4 cup (130g) chocolate chips: adds sweetness and texture

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mash 1 cup ripe bananas until mostly smooth.
  3. Add sourdough discard, eggs, melted butter, vanilla extract, granulated sugar, and brown sugar. Mix until fully combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Gradually fold dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Gently fold in chocolate chips.
  7. Divide batter evenly into muffin cups, filling each about 3/4 full.
  8. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas with brown spots for best flavor.
