Description

Spinach Artichoke Bites are crispy phyllo pastry cups filled with a creamy blend of spinach, artichokes, cheese, and garlic. These bite-sized appetizers deliver classic spinach artichoke dip flavor in an easy, party-ready form that is perfect for holidays, game day, and entertaining.

Ingredients

Scale
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 14 oz canned artichoke hearts, drained and finely chopped
  • 8 oz cream cheese, softened
  • 3/4 cup shredded Parmesan cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 4 to 5 dozen mini phyllo pastry shells

Instructions

  1. Set the cream cheese out at room temperature until softened, or gently soften it in the microwave.
  2. Preheat the oven to 375°F (190°C).
  3. Mince the garlic and finely chop the drained artichoke hearts.
  4. Place the thawed spinach in paper towels and squeeze firmly to remove as much moisture as possible.
  5. In a medium bowl, mix the softened cream cheese, mayonnaise, sour cream, garlic, salt, and black pepper until smooth.
  6. Stir in the spinach, chopped artichokes, and Parmesan cheese until fully combined.
  7. Arrange the phyllo pastry shells on a baking sheet.
  8. Spoon the spinach artichoke mixture evenly into each phyllo cup and smooth the tops.
  9. Bake for 10–12 minutes, until the phyllo edges are lightly golden.
  10. Remove from the oven and serve warm.

Notes

  • Squeeze the spinach very well to prevent soggy bites.
  • The filling can be prepared up to one day in advance and refrigerated.
  • Leftovers reheat best in the oven to maintain crispness.
  • The filling can also be served as a traditional spinach artichoke dip with chips.
