This pie combines sweet, tangy raspberry flavors with a flaky, buttery crust for a delicious treat that will impress your guests at any Halloween gathering.
Ingredients
Scale
- 2 cups flour (for the pie crust)
- 1/2 tsp salt (for the pie crust)
- 2/3 cup shortening or lard (for the pie crust)
- 1/4 cup water (for the pie crust)
- 5 cups fresh or frozen raspberries (do not thaw)
- 2/3 cup sugar (for the raspberry filling)
- 4 tbsp cornstarch or flour (for thickening the raspberry filling)
- Cinnamon and sugar (for sprinkling on the top crust)
Instructions
- Preheat your oven to 425°F (220°C).
- For the pie crust, sift the flour and salt into a bowl. Cut in the shortening until the mixture resembles coarse crumbs. Gradually add water, mixing with a fork until the dough forms. Split the dough into two balls.
- Roll out one ball of dough onto parchment paper to fit a 9-inch pie plate. Press the dough into the plate, trimming the edges.
- Roll out the second ball of dough on parchment paper. Using a ‘Scream’ face template, cut out the design into the crust. Remove the pieces for the eyes, nose, and mouth.
- For the raspberry filling, mix the raspberries, sugar, and cornstarch (or flour) in a bowl, coating the raspberries well.
- Pour the raspberry filling into the prepared bottom crust.
- Carefully flip the ‘Scream’ face crust over the pie using the parchment paper. Press the edges together and trim any excess crust.
- Sprinkle the top crust with cinnamon and sugar.
- Bake the pie for 20 minutes at 425°F (220°C), then reduce the temperature to 350°F (175°C) and bake for another 25-30 minutes until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool for 3-5 hours to let the filling set before serving.
Notes
- Ensure that if using frozen raspberries, they are not thawed before adding to the filling.
- Let the pie rest after baking for 3-5 hours to avoid a runny filling.
- Consider adding a pinch of cinnamon to the raspberry filling for extra flavor.
- If the top crust becomes too rough, use a little water on your fingertips to smooth out the edges before baking.
