Description

Spring Asparagus and Potato Chowder is a creamy yet fresh seasonal soup made with tender potatoes, asparagus, peas, and herbs. It balances comforting texture with bright spring flavors, making it perfect for light dinners or make-ahead meals.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 leeks, white and light green parts, thinly sliced
  • 1 large onion, thinly sliced
  • 1 large shallot, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 pinch sugar
  • 5 cups vegetable broth
  • 1 pound yellow potatoes, peeled and cut into bite-size cubes
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 1 cup green peas
  • 1/2 cup heavy cream
  • 1/4 cup fresh dill, finely chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-low heat.
  2. Add the leeks, onion, shallot, and garlic. Season with salt and a pinch of sugar, then reduce heat to low.
  3. Cook gently for about 20 minutes, stirring occasionally, until the vegetables are soft and lightly caramelized.
  4. Pour in the vegetable broth, then add the potatoes, asparagus, and peas.
  5. Bring the soup to a boil, then reduce to a simmer and cook uncovered until the potatoes are tender, about 15–20 minutes.
  6. Using the back of a spoon, mash some of the potatoes against the side of the pot to naturally thicken the chowder.
  7. Stir in the heavy cream and season with additional salt and black pepper to taste.
  8. Add most of the chopped dill, reserving a small amount for garnish.
  9. Serve warm, garnished with the remaining dill.

Notes

  • For a dairy-free version, replace heavy cream with full-fat coconut milk.
  • Do not over-mash the potatoes to keep a rustic texture.
  • Add extra broth when reheating if the chowder thickens too much.
  • Fresh herbs added at the end preserve bright flavor.
