Ingredients
Scale
- 2 cups fresh or frozen peas
- 1/2 cup fresh mint leaves
- 1/2 cup fresh tarragon leaves
- 1/4 cup fresh dill leaves
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1/4 cup chopped chives or green onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
Instructions
- Start by zesting and juicing the lemon. Chop the fresh herbs (mint, tarragon, dill) and set them aside.
- In a food processor, combine the peas, chopped herbs, lemon zest, lemon juice, chives (or green onion), salt, pepper, and olive oil.
- Pulse the ingredients for a few minutes until the peas are broken down but the pesto still has some texture.
- Serve immediately or store in an airtight container in the fridge for up to 3 days.
Notes
- If using frozen peas, thaw them before blending for the best flavor and texture.
- If you prefer a smoother pesto, add more olive oil or blend in a tablespoon of tahini for extra creaminess.
- This pesto can be stored in the fridge for up to 3 days or frozen for up to 3 months.
- For a gluten-free version, pair with gluten-free pasta or grain bowls.
