Description

Spring Roll Bowl with Peanut Sauce is a fresh, vibrant bowl made with rice noodles, crunchy vegetables, fresh herbs, and a creamy peanut sauce inspired by classic spring rolls.

Ingredients

Scale
  • 8 oz thin rice noodles
  • 1 large carrot, thinly sliced
  • 1 small cucumber, thinly sliced
  • 2 cups red cabbage, thinly sliced
  • 3 green onions, sliced
  • 1/3 cup fresh cilantro, chopped
  • 1/2 cup natural creamy peanut butter
  • 2 tbsp maple syrup or brown sugar
  • 1 1/2 tbsp tamari or soy sauce
  • 2 tbsp fresh lemon or lime juice
  • 1–2 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • 1/2 cup hot water (as needed to thin sauce)

Instructions

  1. Prepare the vegetables by thinly slicing the carrot, cucumber, red cabbage, and green onions. Chop the cilantro and set everything aside.
  2. Cook the rice noodles according to package instructions until just tender. Drain well and set aside.
  3. In a bowl, whisk together peanut butter, maple syrup, tamari, lemon or lime juice, garlic, and ginger.
  4. Slowly add hot water a few tablespoons at a time, whisking until the peanut sauce is smooth and pourable.
  5. Divide the cooked noodles into serving bowls.
  6. Top with sliced vegetables and fresh herbs.
  7. Drizzle generously with peanut sauce and serve immediately.

Notes

  • Store noodles, vegetables, and sauce separately for best texture.
  • The peanut sauce may thicken in the fridge; thin with warm water before serving.
  • This bowl can be served warm, room temperature, or cold.
  • Add tofu or edamame for extra protein if desired.
