Description

Spring Vegetable Brown Butter Gnocchi is a comforting yet fresh pasta dish made with tender potato gnocchi, seasonal spring vegetables, and rich nutty brown butter finished with herbs and Parmesan.

Ingredients

Scale
  • 1 lb potato gnocchi
  • 6 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup asparagus, cut into 1-inch pieces
  • 1 cup sugar snap peas, trimmed
  • 1 cup sliced leeks (white and light green parts)
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1/3 cup grated Parmesan cheese
  • 2 tbsp fresh herbs (parsley or chives), chopped
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions until they float. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add leeks and cook for 3–4 minutes until soft.
  3. Add asparagus and snap peas. Cook for 4–5 minutes until tender-crisp. Remove vegetables from the skillet.
  4. In the same skillet, melt the butter over medium heat. Cook until foamy and golden brown with a nutty aroma.
  5. Add garlic to the brown butter and cook for 30 seconds until fragrant.
  6. Add cooked gnocchi to the skillet and toss gently to coat in the butter.
  7. Return vegetables to the skillet and toss to combine.
  8. Season with salt, black pepper, and lemon zest. Remove from heat.
  9. Serve warm topped with Parmesan cheese and fresh herbs.

Notes

  • Use fresh seasonal vegetables for best flavor.
  • Watch the butter closely to prevent burning.
  • Add red pepper flakes for a spicy variation.
  • Best served immediately for optimal texture.
