Description

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Wash, hull, and slice the strawberries. Place them in a bowl, add 1/4 cup sugar, mix gently, and let sit for 20–30 minutes until juicy.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. Add cold butter and cut it into the flour mixture using a pastry cutter or fingers until it resembles coarse crumbs.
  5. Pour in milk and vanilla extract, then mix gently until a soft dough forms. Do not overmix.
  6. Turn the dough onto a floured surface, pat it into a 1-inch thick layer, and cut into rounds.
  7. Place the shortcakes on the baking sheet and bake for 15–18 minutes or until golden brown.
  8. While cooling, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Slice the shortcakes in half. Layer the bottom half with strawberries and juice, add whipped cream, then place the top half.
  10. Finish with more strawberries and whipped cream before serving.
